Singaraja- The achievements of students of Universitas Pendidikan Ganesha (Undiksha) amidst the pandemic keep coming. In the event of “Business Plan Food Creation National Competition” held by the Department of Food Products Technology Bogor Agricultural University (IPB) from 5 April to 3 July 2021. Undiksha team consisting of Kelly Aurora Siregar from the Department of Fisheries and Marine Affairs, Theresia Putri from the Department of Fisheries and Marine Affairs, and Putu Dany Indrawan Sidhi from the Department of Economics and Accounting won second place.
In the competition followed by 48 teams from various universities in Indonesia, the Undiksha team present the product “Millenials Air Frying Tuna Skin Crackers Suna Cekuh Flavor with Mentai Saos”. Dany Indrawan Sidhi, the representative of the team, explained that the product is a cracker made with processed tuna skin, seasoned with Balinese exquisite spices, which includes suna cekuh (garlic and aromatic ginger) and interlocal flavor from the mentai sauce. The motive behind this product is tuna skin is often wasted, though it contains a high protein. “The making of this product is based on our concern of the existence of tuna skin which is still minimally optimized. Often, the result of the processed tuna skin ends up becoming waste that pollutes the environment. Whereas, the processed tuna skin has a high protein that is as superior as the other parts of its body,” he said.
This student, who is currently in the IV semester, added the preparation made to follow the competition needs more than 2 months counted from making the summary, preparing the proposal, up to processing the product. In the process of making, air frying methods are used to minimalize oil in the food so that it becomes healthier. The choice of suna cekuh flavor is one of the reasons that uplifts this team’s spirit to introduce Balinese local flavor to be known by many.
The success of the Undiksha Team certainly cannot be separated from the encouragement and enthusiasm of the supervisor, namely Gressty Sari Br Sitepu, S.Pi., M.Sc. and Made Dwipa Kusuma Maharani, S. Tr. Pi., M.P., who always provides input at every stage and preparation. The student who was born in 2000 also revealed that this competition is also a means of proving that they can take part in competitions outside of the study programme or courses they take. “Even though the three of us are not students from the Fishery Products Technology programme, we wanted to show that we can try and learn new things outside our major/courses that we do now,” he said. This amazing achievement ignited a sense of pride in the team members. “We are very happy to get this achievement because apart from being able to take part in bringing the name of Undiksha on the national stage, we also get new experience and knowledge,” he concluded.
Vice-Rector of Student Affairs, Alumni, and Public Relations Undiksha, Prof. Dr. I Wayan Suastra, M, Pd., expressed his appreciation for this achievement. He also invited other students to be enthusiastic about participating in competitions. The goal is not only to pursue achievements but also as a means of evaluating and improving self-quality. “We are committed to supporting students to take part in the competition. We highly encourage it,” he concluded. (lpsy)
