A training and guidance program on processing coconuts into traditional coconut oil, known as lengis tandusan, was held at the Tejakula Village Hall. This activity was conducted by the PKM-PM Team “Senja Mewangi” team under the supervision of Dr. Putu Nanci Riastini, S.Pd., M.Pd., with the PKK women of Tejakula Village, who are mostly housewives, as the program partners. The aim of the program was to enhance the quality of the coconut oil production in terms of scent, clarity, and taste to ensure it has a longer shelf life and does not quickly spoil (develop a foul odor of bad taste).
This “Melengis” Program is planned to take place over 4 months, from April to July 2024, using the“Catur Karya” method, which consists of four phases. The first phase is Karya Ngenyel (nges and nyeluh) where the coconut fruit is peeled (nges) and the coconut meat is separated from the shell (nyeluh). The second phase, Karya Kiseng (kikih and peseng), involves grating the coconut meat (kikih) and squeezing the grated coconut (peseng) to extract coconut milk. In the third phase, Karya Sadok (saip and ngerodok), the coconut milk is filtered (saip) to separate it from the pulp and then boiled (ngerodok), until it produces coconut oil. The final phase, Nyugor (nyuling and ngoreng), involves evaporating the water from the oil (nyuling) and frying (ngoreng) the coconut oil to complete the process.
